Three Sisters Tacos

Ingredients

1 tbsp olive oil
2 cups butternut squash, diced
1 small onion, diced
4 garlic cloves, minced
1 jalapeño, minced
1 tbsp cumin
1 tsp chili powder
1/2 tsp salt
2 cups pinto beans, drained and rinsed
1 cup corn
1/2 lime
1/2 cup cilantro
12 taco shells

Directions

  1. Preheat oven to 400º
  2. Combine squash, onion, and garlic in a baking dish and sprinkle with spices and salt. Toss with olive oil.
  3. Roast for 15 minutes or until vegetables are tender.
  4. Add beans, corn, lime juice, and cilantro and return to oven for 5-7 minutes or until hot.
  5. Spoon into taco shells & serve.
