Creamy Muskrat and Onions

Ingredients

1 muskrat
1 1/2 tsp salt
1/4 tsp paprika
1/2 cup flour
3 tbsp fat
3 large onions, sliced
1 cup sour cream

Directions

  1. Soak muskrat overnight in salted water (1 tbsp salt to 1 quart water).
  2. Drain, disjoint and cut up.
  3. Season with 1 tsp salt, paprika, roll into flour and fry in fat until browned.
  4. Cover muskrat with onion, sprinkle onions with 1/2 tsp salt.
  5. Pour in the cream, cover skillet tightly and simmer for 1 hour.
